Adonis
A stirred aperitif of sherry, sweet vermouth and orange bitters.
Go to the recipe ↓The Adonis is sherry and sweet vermouth stirred over ice with orange bitters, then strained. The main choice is balance. Imbibe's version, reprinted from Rebekah Peppler's Apéritif, uses the same amount of sherry and vermouth. Punch's version uses more fino and less vermouth. The orange peel also differs: Imbibe pinches the peel over the drink and discards it, while Punch leaves the peel in as the garnish.

Fino, manzanilla or amontillado
The sherry you buy depends on the card you follow. Imbibe accepts fino or manzanilla, Punch calls for fino, and the Cocktail Virgin version uses an amontillado. For its fino version, Punch's editors favor Lustau's La Ina, which they describe as more pungent than most finos, paired with Carpano Antica vermouth. For a fruitier drink, they suggest Dolin or Martini & Rossi.
