Big Chief

A stirred bourbon cocktail with Averna and Punt e Mes, finished with an orange peel.

Go to the recipe ↓

The Big Chief is Abigail Deirdre Gullo's New Orleans bourbon drink. It is a variation on the Longshoreman, which follows the Red Hook and, further back, the Manhattan. Bourbon leads, with smaller equal pours of Averna and Punt e Mes. You stir it with ice and strain it into a stemmed glass. Both published versions below use the same measures. The decisions left to you are which bourbon to pour and whether to flame the orange peel.

Recipe 1 · PUNCH

Punch: flamed orange peel

Contains alcohol

Ingredients

Original recipe quantities.

Method as published

  1. Pour the bourbon, Averna and Punt e Mes into a mixing glass.
  2. Fill with ice and stir until the drink is cold.
  3. Strain into a Nick and Nora glass or a coupe.
  4. Hold a piece of orange peel between your fingers over the drink and warm its peel side with a lit match.
  5. Squeeze the peel so its oils spray through the flame, then drop the peel into the glass.

Garnish Flamed orange peel

  • Punch prefers Buffalo Trace for the bourbon.

Flamed or plain twist

The flame is the only step that needs anything beyond bar tools: a lit match held to the orange peel above the finished drink. Cocktail Virgin's version prints "unflamed twist" in parentheses next to the flamed twist, so a plain orange twist is also a published finish. Whichever finish you choose, the measures and the stir stay the same.
