Champagne Cocktail

The IBA build: a bitters-soaked sugar cube, a little cognac and a measured pour of Champagne.

Go to the recipe ↓

The IBA Champagne Cocktail is built directly in a large Champagne glass, with no shaker, mixing glass or ice. Angostura goes onto a sugar cube, a small measure of cognac follows, and chilled Champagne goes in last. The Champagne has a fixed measure rather than serving as a top-up, so pour to 90 ml instead of filling the glass.
