Lion's Tail

A shaken bourbon sour with pimento (allspice) dram, lime and Angostura.

Go to the recipe ↓

The Lion's Tail is 2 oz bourbon shaken with half an ounce each of lime juice and pimento dram, a little syrup and Angostura, then strained into a chilled glass. The real choice is between versions: Imbibe adds an egg white and sweetens with a barspoon of rich 2:1 syrup, while Punch omits the egg and uses a teaspoon of plain simple syrup with an extra dash of bitters.

Egg white, syrup and bitters

The bourbon, lime and dram measures are the same in both cards, so the differences sit in the small lines. Imbibe's egg white is the only change in texture-building ingredients, and its sweetener is a denser 2:1 syrup by the barspoon; Punch uses standard simple syrup by the teaspoon and doubles the Angostura to two dashes. Neither source gives a garnish, and both shake with ice and strain into a chilled glass rather than serving over ice.

Imbibe names the liqueur pimento dram and Punch calls it allspice dram. A third source, cocktailvirgin, follows the eggless pattern with one dash of bitters and allows gomme or simple syrup.
