Negroni Pilsner

Steam Whistle's beer Negroni recipes: a pilsner-forward build without gin, plus the brewery's gin version.

Go to the recipe ↓

Steam Whistle publishes two beer Negronis. The card below is its pilsner-forward Classic Beer Negroni: Campari and sweet vermouth built over ice, with pilsner as the largest measure and no gin. The pilsner is poured slowly down the side of the glass, and the drink gets one gentle stir. The brewery uses the heading Negroni Pilsner Cocktail for a different version that keeps the gin and is stirred and strained. That version is described below.

Method as published

  1. Fill a rocks glass or another short tumbler with ice.
  2. Pour the Campari and sweet vermouth straight into the glass.
  3. Add the pilsner slowly, letting it run down the inside of the glass so it keeps its carbonation.
  4. Stir once, gently, only until combined.

Garnish A wide orange peel, expressed over the glass before it goes in. The ingredient list also names a blood orange slice as an alternative.

  • The source specifies its own Steam Whistle Pilsner. Like the Campari and vermouth, the pilsner is an alcoholic ingredient, and it is the largest measure in the drink.
  • Steam Whistle calls the ratio flexible. It suggests more Campari for more bitterness, or more vermouth for a sweeter, more wine-forward drink.
  • For a group, the source mixes only the Campari and vermouth in advance. Each glass is then poured over ice and topped with cold pilsner at serving time.

Steam Whistle's gin version

Under the heading Negroni Pilsner Cocktail, Steam Whistle keeps gin in the drink and uses the beer as a lengthener. Stir 22 ml each of gin, Campari and sweet vermouth in an iced mixing glass for about 20 to 25 seconds. Strain over a large ice cube in a rocks glass, top with 60 ml cold pilsner poured gently, and garnish with orange peel. The source suggests a London Dry gin.

Choosing between the two versions changes the shopping list and the equipment. The gin version adds a bottle of gin and a mixing glass, and it uses half as much pilsner. The pilsner-forward card needs no bar tools beyond the serving glass.
