Pan American Clipper

An apple brandy sour with grenadine and absinthe, in two published versions.

Go to the recipe ↓

The Pan American Clipper is a shaken drink of apple brandy, citrus, grenadine and a little absinthe, strained into a cocktail glass. The main choice is what to do with the absinthe. Imbibe uses it only to coat the glass and pours off the excess. Punch shakes a dash of it into the drink.

  • The 1 tsp of absinthe is for coating the glass. Most of it is poured off, so not all of it ends up in the drink.
  • Use fresh lemon juice and fresh lime juice.

Rinse or dash, and how much grenadine

Both versions use 1 oz of citrus in total. Imbibe divides it into ½ oz lemon and ½ oz lime, so you need both fruits; Punch uses lime alone. Imbibe pours more apple brandy, 2 oz against 1½ oz. The largest gap is the grenadine: ¾ oz in Imbibe, about four and a half times Punch's single teaspoon.

The absinthe changes the method more than the shopping list. Imbibe asks you to coat the glass before you strain, so prepare the glass while the drink is shaking. Punch needs only a chilled glass. Neither the rinse nor the dash scales exactly, so set the absinthe separately when you make several drinks.
