Every wedding has guests who aren't drinking. Pregnant guests, sober guests, guests on medication, guests who are driving two hours home, and the couple's one friend in the middle of marathon training. At most weddings, all of them get the same offer: sparkling water or a soda from the bar gun, while everyone else raises a glass of something considered.

A real non-alcoholic option earns its place on the printed menu with a name, the same way the signature cocktails do. The move that works: one bitter, one bright.

The bitter one: Phony Negroni. Deep red, carbonated, built on gentian root in the model of the 1919 Florentine Negroni. It photographs like a cocktail because it is one, minus the alcohol: less than 0.5% ABV, made in Brooklyn, over 1,500 five-star reviews.

The bright one: Phony White Negroni. Lighter, citrus-forward, Double Gold at the 2025 San Francisco World Spirits Competition. This is the one for the golden-hour photos.

The toast

The champagne moment is where non-drinking guests feel it most.
