Non-Alcoholic Drinks That Are Not Sweet

Ask people why they gave up on non-alcoholic drinks and the answer is nearly always the same: everything tastes like juice. The shelf skews sweet because sweetness is the easiest thing to bottle. Fruit, sugar, a botanical on the label, and the result drinks like a soda wearing a cocktail's clothes.
Adult drinks run on the opposite pole. Bitterness is what separates a cocktail from a soft drink, and it's the hardest thing to build without alcohol, which is why so few brands try.
Built bitter on purpose
The entire St. Agrestis non-alcoholic lineup starts from bitterness. The Phony Negroni is modeled on the 1919 Florentine Negroni: gentian root, the classic bittering botanical of the Italian aperitivo tradition, forms the backbone, with bitter orange peel over it and real CO2 carbonation for structure. Dry, cold, deep red, and finished in twenty good minutes over ice. Less than 0.5% ABV, made in Brooklyn, SFWSC Platinum 2024.
The dry shelf, mapped
- Phony Negroni: the benchmark. Bitter, citrus, dry.
- Amaro Falso: the deepest bitter in the lineup, an Italian-style amaro for after dinner.
- Phony Mezcal Negroni: smoke and spice over the bitter base.
- Phony Espresso Negroni: coffee bitterness layered on cocktail bitterness.
- Phony White Negroni: the brightest of the six, and still dry. Double Gold, SFWSC 2025.
The Starter Pack has all six, which is the fastest way to find your bitterness ceiling.
Reading a label for sweetness
Three tells help anywhere on the shelf. First, where fruit sits in the description: fruit-forward usually means sweet-forward. Second, whether the drink names its bittering agent; gentian on a label is a commitment. Third, the serve: drinks meant for ice and a citrus peel are built dry, drinks meant for a straw rarely are.
Questions from the sweet-averse
Is bitter an acquired taste? Somewhat, and it's worth acquiring. Start with the White, move to the flagship, and finish at Amaro Falso.
Do any serves soften it without sugar? The Lighter Phony Spritz in the recipe guide lengthens the pour with soda: same dryness, lower intensity.
