The sbagliato is the negroni's happy accident: sparkling wine where the gin should be, which turns a slow bitter drink into a celebration pour. The story says a Milanese bartender grabbed the wrong bottle and kept the result. Whatever actually happened, the drink stuck because it solved a real problem, a negroni light enough for a toast.

The non-alcoholic version solves a second problem: a toast everyone in the room can raise.

This is the exact build from the St. Agrestis recipe guide:

  • One 200ml bottle of Phony Negroni, chilled
  • Two ounces of non-alcoholic sparkling wine for the fully non-alcoholic serve, or dry prosecco for the low-proof version
  • One swath of orange peel
  • Ice

Why it works without the alcohol

A sbagliato lives or dies on the bitter half, and that's the part the Phony Negroni was engineered to carry: gentian root at the backbone, bitter orange peel, deep red color, real carbonation. The base is modeled on the 1919 Florentine Negroni and holds SFWSC Platinum 2024, the first the competition gave a non-alcoholic product. Add the sparkle and the structure holds.
