Aperitivo is the Italian answer to the question of what the hour before dinner is for. How to run the hour

Aperitivo has rules, and they're worth keeping even without the alcohol.

  • Pour over ice in a rocks glass. The 200ml bottle is one serve, so there's no mixing and no measuring.
  • Express an orange peel over the glass and drop it in.
  • Put out something salty: olives, chips, almonds, a piece of parmesan. The bitterness is built to work against salt and fat.
